1 pound (95-percent) lean ground beef
3/4 cup cooked quinoa (use frozen or cook it from scratch*)
1/4 cup finely chopped onion
1/4 cup grated carrot
1/4 cup grated zucchini
2 tablespoons ketchup
1 clove garlic, minced
1 tablespoon soy sauce
1/2 teaspoon ground black pepper
1/2 teaspoon fine sea salt
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1 egg, lightly beaten
HOW TO MAKE BEEF AND QUINOA MEATBALLS
Step 1: Prepare the oven. Preheat it to 450 degrees F.
Step 2: Use a parchment paper to line a large baking sheet and set aside.
Step 3: Mix the lean ground beef, cooked quinoa, chopped onion, grated carrot, zucchini, ketchup, garlic, soy sauce, ground black pepper, salt, dried oregano, dried thyme, and egg in a large bowl until incorporated.
Step 4: Shape the mixture into 16 pieces of balls and place onto the prepared baking dish.
Step 5: Place inside the oven and roast for 15 to 17 minutes or until golden brown and cooked through.
Step 6: Once done, remove from the oven and serve immediately.
Cook’s note: To cook the quinoa, boil a cup of water in a small pot. Once boiling, pour a half cup of quinoa and cover. Let it simmer for about 10 to 12 minutes or until the water is absorbed. Set aside for 10 minutes then brush with a fork. Use only 3/4 cup for this recipe and reserve the rest for later use.
