1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sour cream
1 cup sugar
3 large eggs
zest of one orange – about 1 tablespoon
juice of an orange
1/2 cup butter
2 tablespoons sugar
1 1/2 cups fresh cranberries
For the Icing
1 cup powdered sugar
2 – 3 tablespoons water, milk or orange juice
HOW TO MAKE CRANBERRY ORANGE CAKE
Step 1: Prepare the oven. Preheat it to 350 degrees. And with cooking spray, grease a bundt pan.
Step 2: Sprinkle on the bottom of the prepared pan the 2 tablespoons of sugar. Then, 1/4 cup of the cranberries and set aside.
Step 3: In a bowl, cream the butter and sugar for about 4 to 5 minutes until the sugar turns to a lemon color. Add in eggs one at a time and beat until well combined. Stir in the orange juice and orange zest. Mix well before beating in the sour cream.
Step 4: Once the mixture is well incorporated, beat in the flour, salt, and baking powder. Mix well. Now, combine the 1 1/4 cups of cranberries and stir until incorporated.
Step 5: Place inside the preheated oven and bake for approximately 50 to 55 minutes. Insert a toothpick in the center of the cake to check the doneness. Once it comes out clean the cake is done.
Step 6: Remove the cake from the oven and let it set first in the pan for 5 minutes.
Step 7: Then, turn over the cake onto a wire rack to cool completely.
Step 8: To make the icing, mix the powdered sugar and water or milk or orange. Stir until well combined.
Step 9: Glaze the cake. Spread the icing on top and sides of the cake. Enjoy!
