Hershey S’mores Cupcakes

The perfect cupcakes for the perfect day! These bad boys just made my day. I have listed all the ingredients for this incredible cupcake recipe. All you need to do is follow them and you are a few steps away from perfection. Enjoy!

INGREDIENTS

For the crust

1 1/3 cup graham crackers crumbs

5 Tablespoon sugar

5 Tablespoon unsalted butter melted

For chocolate cupcakes

1 cup of sugar

3/4 cup plus 2 tablespoons all-purpose flour

6 tablespoons Hershey’s Cocoa powder

3/4 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1/2 cup milk- room temperature

1/2 cup vegetable oil

1 large egg lightly beaten

1 teaspoon vanilla

1/2 cup boiling water

For marshmallow filling

2 egg whites

1/2 cup sugar

1/4 teaspoon cream of tartar

1 teaspoon vanilla

For milk chocolate ganache

1 cup heavy whipping cream

10 oz. milk chocolate-finely chopped

1/2 Tablespoon vegetable oil

How to make Hershey S’mores Cupcakes

To make the crust:

Step 1: Put the rack in the middle of the 325 degrees F preheated oven.

Step 2: Line the cupcake tines with liners.

Step 3: Add sugar, melted butter, and graham cracker in a small mixing bowl. Stir using a fork until well-mixed.

Step 4: Press 1 1/2 tablespoons of the graham mixture on each cupcake liner.

Step 5: Place inside the preheated oven and bake for 6 minutes. Remove then set aside.

To make the cupcakes:

Step 1: Add flour,  cocoa, sugar, baking powder, baking soda, and salt in a large mixing bowl.

Step 2: Add in egg, vanilla, milk, and oil. Beat using an electric mixer for 2 minutes at medium speed.

Step 3: Pour the boiling water and beat until the batter is thin.

Step 4: Transfer the batter into the cupcake liners.

Step 5: Place inside the oven and bake for 20 to 25 minutes or until a toothpick comes out clean after inserting in the middle of the cupcake.

Step 6: Remove from the oven and cut the upper part of the cupcake for later use.

To make marshmallow filling:

Step 1: Add simmering water, egg whites, cream of tartar, and sugar in a heatproof bowl. Allow the sugar to dissolve.

Step 2: Whisk over simmering water until warm then turn off the heat.

Step 3: Whisk further using a mixer until it forms a peak.

Step 4: Add the vanilla and stir until well blended.

Step 5: Place the filling inside a piping bag and cut off the corner for filling the cupcakes.

To make the ganache:

Step 1: In a small saucepan, add the chopped milk chocolate with 1/2 tablespoon of vegetable oil and allow the chocolate to melt. Stir until smooth.

Step 2: Remove the saucepan from the heat and add in cold heavy whipping cream.

Step 3: Stir until all the ingredients are well combined.

Step 4: Spread the ganache over the cupcakes. Use a spoon or a spatula.

Step 5: Serve and enjoy!

Note: Put the leftovers inside the fridge.
