Mini Corn Dogs

The best Corn Dog recipe you will ever lay your teeth into! The taste and texture of these corn dogs will definitely make you want to eat more. I have tried a lot of recipes like this but this was the best so far! I don’t know but this one found its way to my mouth and heart! The only way to know if what I am saying is true is to try it yourself. I have listed all the steps that you need to follow and you are in for a treat. Make sure to bake a lot because I am certain that it’s gonna be a hit. Enjoy!

INGREDIENTS

1/2 cup melted butter (or 1/4 cup butter + 1/4 cup unsweetened applesauce)

1/4 cup Truvia Baking Blend

2 eggs

1 cup buttermilk (regular milk is fine)

1/2 teaspoon baking soda

1 cup cornmeal

1 cup all-purpose flour

1/2 teaspoon salt

8-10 all-beef hot dogs, cut into 1″ bites

How to make Mini Corn Dogs

Step 1: Ready the oven and preheat to 375 degrees.

Step 2: In a medium mixing bowl, add sugar and butter. Whisk until well mixed.

Step 3: Beat in the eggs and whisk until well combined.

Step 4: Pour in the buttermilk and whisk until well mixed.

Step 5: In another mixing bowl, add flour, baking soda, cornmeal, and salt. Stir until well mixed.

Step 6: Transfer the flour mixture into the liquid mixture. Make it two sets.

Step 7: Apply cooking spray in a muffin tin.

Step 8: Spoon the batter and fill each minimuffin tin cup with it.

Step 9: Add one hot dog bit in the center of every cup.

Step 10: Place inside the preheated oven for 8 to 12 minutes or until the cornbread becomes golden brown.

Step 11: Remove from the oven and allow it to cool for 5 minutes.

Step 12: Serve and enjoy!

Note: For leftovers, store inside the fridge. Reheat inside the oven for 20 to 30 seconds when serving.
