She likes everything with pineapple, thus, this cake. This is her summer kind of dessert. Super delicious, creamy, light, and fluffy. Another no-bake recipe that is surprisingly good! This beauty needs only a few ingredients to make. It is fun to make. No need to tun on the oven, just mix, and chill. By far, one of my favorite no-bake cake to make. Quick, easy, and hands down satisfying. And who would not want a refreshing cake for hot summer weather? This no-bake pineapple dream dessert is the perfect way to sweeten your summer.
1 8-oz package cream cheese (softened)
1 cup powdered sugar
1 cup crushed pineapple (drained)
1 8-oz tub whipped topping, like Cool Whip
For the Crust
1/2 cup granulated sugar
1/2 cup melted butter
20 graham crackers, crushed
For the Topping
1/4 cup shredded coconut
1/4 cup diced pineapple (drained)
How to make No-Bake Pineapple Dream Dessert
Step 1: Beat the cream cheese in a medium bowl using an electric mixer until lightly fluffy.
Step 2: Slowly add in the powdered sugar. Mix until incorporated.
Step 3: Now, beat in the whipped topping and mix until fluffy.
Step 4: Use a spatula to fold in the crushed pineapples. Set aside.
Step 5: Combine the crushed graham crackers, granulated sugar, and melted butter in a small mixing bowl. Mix until incorporated.
Step 6: Once the mixture is well combined, pour it into a 9 x 9-inch baking dish. Pat to even.
Step 7: Use a spoon to place the filling on top of the crust. Use a spatula to smooth and even the surface.
Step 8: Sprinkle over the shredded coconut and diced pineapple. Place inside the fridge and chill for at least 2 hours or until firm.
