Today’s recipe is not only delicious but also very healthy. I discovered this recipe last week when I was browsing the internet for easy salad recipes that I can try. See, I am trying to lose weight. Recently, I have been feeling a little dizzy because of all the meat I have been consuming. So, what easy way to becomes healthy but to exercise and eat the right and healthy food, right? Anyway, I have been eating this salad for almost 2 weeks now and the results are really good. I have lost weight and not only that, but I also enjoy eating this. 5 cups broccoli, cut into florets
1 apple, cored and diced
1 pear, cored and diced
1/4 cup red onion, finely chopped
1 cup cashews (toasted, optional)
1 cup dried cranberries
For the Dressing
1/2 cup mayonnaise
1/2 cup Greek yogurt
2 tablespoons lemon juice
3 tablespoons honey
Kosher salt and freshly ground pepper, to taste
How to make Poolside Broccoli Salad
Step 1: Add in the Greek yogurt, mayonnaise, honey, and lemon juice in a medium bowl. Whisk until well-mixed.
Step 2: Add salt and pepper to taste.
Step 3: Add in the diced apple, pear, red onion, cranberries, cashews, and broccoli florets in a large bowl. Toss until all the ingredients are well blended.
Step 4: Transfer the dressing into the veggies mixture and toss until all ingredients are fully coated with the dressing.
Step 5: Place inside the fridge for at least 20 to 30 minutes to chill and so the flavors will set.
Step 6: Serve and enjoy!
