I have tried a lot of recipes like this but this was the best so far! I don’t know but this one found its way to my mouth and heart! The only way to know if what I am saying is true is to try it yourself. I have listed all the steps that you need to follow and you are in for a treat. 1/2 cup melted butter (or 1/4 cup butter + 1/4 cup unsweetened applesauce)
1/4 cup Truvia Baking Blend
1 cup buttermilk (regular milk is fine)
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
8-10 all-beef hot dogs, cut into 1″ bites
How to make Mini Corn Dogs
Step 1: Ready the oven and preheat to 375 degrees.
Step 2: In a medium mixing bowl, add sugar and butter. Whisk until well mixed.
Step 3: Beat in the eggs and whisk until well combined.
Step 4: Pour in the buttermilk and whisk until well mixed.
Step 5: In another mixing bowl, add flour, baking soda, cornmeal, and salt. Stir until well mixed.
Step 6: Transfer the flour mixture into the liquid mixture. Make it two sets.
Step 7: Apply cooking spray in a muffin tin.
Step 8: Spoon the batter and fill each minimuffin tin cup with it.
Step 9: Add one hot dog bit in the center of every cup.
Step 10: Place inside the preheated oven for 8 to 12 minutes or until the cornbread becomes golden brown.
Step 11: Remove from the oven and allow it to cool for 5 minutes.
Step 12: Serve and enjoy!
Note: For leftovers, store inside the fridge. Reheat inside the oven for 20 to 30 seconds when serving.
