This is a quick meal that you can serve your loved ones on a busy day. A fast dish with pieces of juicy chicken, tender but crisp broccoli with amazing homemade ginger and garlic stir fry sauce.
My family loves chicken more than anything! I have a lot of chicken recipes and this Chicken and Broccoli Stir Fry is my new addiction. It is healthy, saucy, super delicious, and the quickest and easiest to make. This dish has become one of my go-to lunch or dinner choice, especially during busy days. When I come home from work exhausted, most of the time I can barely move a muscle. So either I bring home a take out or cook whatever I can. I feel guilty whenever that happened. Thank goodness I have options and this dish is one of my saving grace. I normally serve this with rice or over noodles and it’s equally great!
1 pound of boneless skinless chicken breast cut into 1 inch pieces
2 cloves of finely chopped garlic
2 teaspoons of finely chopped ginger
1 cup of chicken broth
3 tablespoons of soy sauce
2 teaspoons of sugar
2 cups of broccoli flowerets
2 teaspoons of cornstarch
How to make Chicken and Broccoli Stir Fry
Step 1: Sprayed with a non-stick spray a 12-inch nonstick skillet. Heat over medium-high heat, then, add in the chicken, garlic, and ginger. Fry for about 2 to 3 minutes or until brown.
Step 2: Stir in the 3/4 cup of broth, soy sauce, and sugar. Cover the skillet and cook for 5 minutes mixing halfway.
Step 3: Then, add in the broccoli and cook for another 5 minutes, covered. make sure to stir occasionally.
Step 4: Combine the 1/4 cup of broth with cornstarch in a small bowl. Uncover the skillet and pour in the broth and cornstarch mixture.
Step 5: Continue cooking and stirring until the sauce is thick.
