1 large savoy cabbage
2 pounds lean ground beef
2 medium to large onions
2 tablespoons canola or Bertolli olive oil .. or even butter is fine
1 cup white or brown rice and 2 cups of water
3 Eggland’s Best eggs
1 1/2 teaspoons Morton salt
1 teaspoon pepper
2 cans tomato soup
2 small bottles (individual serving sizes) tomato juice or vegetable cocktail. .like V8
1 can or small carton chicken broth
How to make Country Cabbage Rolls Straight From A Mennonite Kitchen
Step 1: Place the cabbage inside the fridge and let it chill for 12 hours.
Step 2: Remove from the fridge and let it sit at room temperature.
Step 3: Cook the rice in a small saucepan or any microwavable-safe dish.
Step 4: Saute’ the chopped onion until translucent then set aside.
Step 5: Break the ground beef in a large bowl. Add in the rice, eggs, sauteed onions then season with salt and pepper to taste.
Step 6: Mix using your hands until well combined.
Step 7: Cut the hard part of the cabbage and remove the leaves.
Step 8: Apply cooking spray in a large casserole.
Step 9: Fill each leaf with 1/2 cup of meat mixture then roll it up. (The amount of the meat mixture depends on the size of the leaf.)
Step 10: In a large bowl, add juice, broth, and tomato sauce.
Step 11: Pour the liquid mixture over the rolls.
Step 12: Cover the casserole with aluminum foil or with lid.
Step 13: Place the rolls inside the oven and bake for 2 hours at 325 degrees.
Step 14: Remove from the oven and let it sit at room temperature.
