  • 1 cup orzo pasta
  • 14 oz canned diced tomatoes (preferably fire-roasted)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet over medium heat, heat olive oil. Sauté chopped onions until translucent, then add minced garlic and cook for about 1 minute.
  2. Add the ground beef to the skillet, breaking it apart as it browns (about 5 minutes). Drain excess fat if necessary.
  3. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for 10 minutes.
  4. Meanwhile, cook orzo in salted boiling water according to package instructions (about 8 minutes). Drain and reserve some pasta water.
  5. Reduce heat on the skillet and stir in heavy cream until combined. Adjust consistency with reserved pasta water if too thick.
  6. Add cooked orzo to the skillet and gently combine over low heat for an additional minute. Serve warm.
