4 chicken breasts, boneless and skinless
1 cup panko bread crumbs, or 1/2 cup flour
pinch salt and pepper
2 tablespoons vegetable oil
7 tablespoons butter, unsalted and divided
2 medium lemons
1 large shallot, minced
1 large garlic clove, minced
2 cups chicken stock (I use low sodium)
1 tablespoon chicken stock concentrate, optional
2 tablespoons capers, drained
3 tablespoons parsley, finely chopped and divided
How to make Lemon Chicken Piccata
Step 1: Ready the oven and preheat to 180 degrees C.
Step 2: Juice the first lemon then set aside the juice. Cut the second lemon from the bottom to the top. Remove the edges. Slice the first lemon into thin round pieces.
Step 3: Cut the chicken breast into two forming a butterfly shape.
Step 4: Dry the chicken by patting using paper towels. Season with salt and pepper on each side to taste.
Step 5: Place a large skillet on the stove and turn the heat to medium-high.
Step 6: Add 2 tablespoons of butter and 2 tablespoons of oil.
Step 7: Dip the chicken into the flour or Panko crumbs.
Step 8: Fry the first batch of the chicken for 2 minutes or until the color turns brown on each side. Repeat this to the next batch. Add 2 more tablespoons of oil and butter.
Step 9: Place the cooked chicken on a clean plate. Wrap with aluminum foil and place inside the warm oven.
Step 10: Add the shallots into the skillet and saute. Cook until translucent then add in the minced garlic and cook for 30 seconds or until aromatic.
Step 11: Pour in the chicken broth, lemon juice, stock concentrate, and lemon slices. Bring to a boil and simmer for 10 minutes or until the liquid reduces to 1 1/2 cups.
Step 12: Add in the parsley and capers. Add in 3 tablespoons of butter and allow it to melt.
Step 13: Remove the chicken from the oven. Remove the cover and transfer them into a clean plate.
Step 14: Pour the sauce over the chicken and spread evenly. Sprinkle with the rest of the parsley.
