- 200g digestive biscuits (or graham crackers)
- 100g unsalted butter, melted
- 400g full-fat cream cheese
- 150g granulated sugar
- 60ml fresh lime juice (about 2 limes)
- Zest of 1 lime
- 240ml whipped cream
Instructions
- Preheat oven to 350°F (175°C). Crush the digestive biscuits until fine, mix with melted butter, and press into the bottom of a springform pan.
- Beat cream cheese and sugar together until smooth. Add lime juice and zest, mixing thoroughly.
- Fold in whipped cream gently until well combined.
- Pour filling over the crust and smooth the top. Cover and chill in the refrigerator for at least four hours or overnight.
- Remove from pan, garnish if desired, slice, and serve chilled.
